5-MINUTE HEALTHY STRAWBERRY FROZEN YOGURT
4 cups frozen strawberries
3 Tablespoons agave nectar or honey
1/2 cup plain yogurt (non-fat or full fat)
1 Tablespoon fresh lemon juice
Add the frozen strawberries, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor. Process until creamy, about 5 minutes.
Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.
I prefer a more tart frozen yogurt, but you can add additional agave nectar or honey if you want a sweeter-tasting dessert.
Fresh strawberries can be used in place of frozen, however the fresh strawberries must be frozen solid.

"Canadass" was what really did it for me.
My (college) alma mater recently asked as an essay prompt for prospective students, “What does #YOLO mean to you?” I thought it was a stupid prompt then, and I think it’s a stupid prompt now, but I have finally realized what #YOLO means to me.
Tonight, I made myself not one, but two jalapeno popper grilled cheese sandwiches. Roasted jalapenos, cream cheese, and cheddar cheese between two slices of sourdough…sounds majestic, right? (It was.) I’ve eaten monstrous quantities of macaroni and cheese, sometimes all in one sitting, so I figured I could handle the fat content of the sandwiches without a problem. I was wrong.
The first sandwich was divine, but about 1/4 of the way through the second one, I considered that I might have made a grave mistake. I doggedly kept eating, but I finally had to abort my mission with 1/4 of the sandwich still remaining.
I can feel my arteries clogging and I might be dead by the time I’m 23 (my birthday is in ~2 weeks, just for reference), but I’m glad I got to discover what I think is important to do in my limited time on earth. Eating grilled cheese sandwiches in excess that are delicious but awful for me…that is what #YOLO means to me.
If that prompt had existed at the time of my application and I’d written this as a serious response, I wonder if my alma mater would have ended up rejecting me…
Deep-Dish Chocolate Chip Cookie for One
Ingredients (1 serving):
- 1 Tbsp unsalted butter, at room temperature
- 1/2 Tbsp unrefined granulated sugar, such as evaporated cane juice
- 1/2 Tbsp packed light brown sugar
- 1 Tbsp beaten egg, preferably organic (cover & chill remaining beaten egg for tomorrow’s cookie cup… you will be making another one!)
- tiny splash pure vanilla extract
- 2 1/2 Tbsp whole wheat pastry flour (can substitute with 3:1 of cake flour and all purpose flour)
- 1/8 tsp baking soda
- tiny pinch salt
- heaping 1 Tbsp grain-sweetened chocolate chips, such as Sunspire
In a small ramekin or microwavable cup, combine softened butter and both sugars; stir well with a spoon. Stir in beaten egg and vanilla extract. Stir in flour, baking soda, and salt just until combined. Stir in chocolate chips.
Microwave on high for 35-40 seconds. Let cookie rest at room temperature for about 10 seconds before devouring.
